Day Twelve…

I am experimenting with a new recipe from Food Network, a marinade for Grilled Pork Tenderloin  (click the link to watch the video).  I think it should come out really good I’m especially glad I bought a meat thermometer, that way the pork will not be dry:

The points value (7sp)  for the recipe includes the pork, so I think that’s a good deal.I think I’ll make rice with black beans and cilantro to go with it. I’m not sure what vegetable yet, but I think green beans would be a good choice. More to come tomorrow for how this turned out.

I’ve been thinking a lot about gratitude for a while now. That, and the notion that I should actively be looking for beauty in the world.  It feels good to look at the world this way because it makes me be more present and self-aware. I went for a walk, and look at what I found all I had to do was to look:

Yesterday, I read a great article from The New York Times, Why I Worship the Weight Watchers Founder Jean Nidetch Jean Nidetch was driven to succeed, she beat the odds and lost her weight for good. Obviously, her success was rooted in more than her personal desire to lose weight. It was connected to a greater sense of purpose. As a result, her weight loss granted her freedom in every sense of the word. It granted her freedom to live a healthy life; to achieve financial independence; to create something substantial that would outlive her –  her company is part of her legacy.

It all began with a gracious stance in an apartment in Queens New York. Her success grew from that generous lens I’m trying to adopt. I imagine her telling me, “Even though weight loss is difficult you can do it. Look at me, I did it and so can you.”  As it is with so many things, all I really have to do is believe that I can do this and then, eventually with a lot of dedication, it will happen.

I will continue to be: patient, kind, and mindful as I work my way to goal.  I hope you will do the same.
